Potato Chilli !?


A yummy vegetarian dish.

I make a lot of chili - so much that I sometimes get tired of it. One day I decided to experiment a little and used potatoes in place of the traditional meat.


I was pleasantly surprised the first time I tried this dish. The potatoes really soak up that flavor.

What You'll Need :

  • 1 medium potato peeled and diced
  • 1 medium onion diced
  • 1 anaheim chili pepper sliced
  • 2 cloves garlic
  • 1 1/2 tablespoons vegetable oil
  • 1 cup vegetable stock (or water)
  • 1 can of red kidney beans (15 oz.)
  • 1 can of chopped tomatoes (15 oz.)
  • 3 tablespoons chili powder
  • 1 tablespoon paprika
  • 2 teaspoons celery seed
  • 2 dashes cayenne
  • 2 dashes Tabasco sauce
  • 2 teaspoons honey
  • 2 teaspoons cider vinegar

What To Do


  • Heat a large skillet over med to med-hi heat.
  • Add vegetable oil, onions, and potatoes.
  • Cook for about 4 minutes, reduce heat to med. Add 1 tablespoon chili powder, celery seed, and 1/2 of the paprika. Stir and cook for 2 more minutes.
  • Add peppers cook for 2 more minutes.
  • Deglaze with stock. Add tomatoes and beans.
  • Reduce heat and simmer 1 or 2 hours.
